Main cholesterol diet characteristics: calorie content reduction due to proteins, carbohydrates, and especially fats. Small quantity of animal fat and light-digestible carbohydrates are recommended if you want to lower cholesterol with help of this diet. The number of proteins complies with physiological norm. Table salt, liquids and cholesterol are limited as well as large quantity of vitamin C and group B, magnesium and microelements (such as oil, vegetables and fruits, see food). . All dishes are cooked without salt; but it’s possible to use salt before eating. Meat and fish should be boiled.

It is necessary to point out that meal should be maximally well-milled. Boiled meat is recommended to be minced. Porridges are cooked longer that for usual meal: from rice and oatmeal – 1, 5, from buckwheat – 2, from pearl barley – 3 hours. For meals cooked from products with large moisture content and soft consistence (vegetables), it’s better to use infiltration: products covered for 1/3 of water are boiled in closed pan. Also cooking with steam is used when the products aren’t covered with water but are warmed up with steam from boiling; this gives less solvent loss. To decrease protein content in products, it’s recommended to boil down the products. At the same time, most effective is to boil product cut into pieces. While boiling a large piece of meat with onion and roots, proteins are saved better. To decrease carbohydrates, it’s necessary to soak starch containing products, to make broth from fruits and berries. Try to limit the quantity of calcium salts, it’s necessary to exclude milk and other milk products, leaf greens and apples from meal.

Chemistry and calories of cholesterol diet: proteins – 90-100gr, fat – 80gr, carbohydrates – 350-400gr (totally 2600-2700 calories).

Eating pattern: small portions 5 times per day

Recommended and excluded dishes and food for cholesterol lowering diet:
Bread and pastry. Bread from wheat flower, rye-bread, corn bread, crackers, baked dishes with fish and meat without salt.
Excluded: meals from fancy and flaky pastry.

Soups. Vegetable, vegetarian with potato and cereals, fruit, milk soups.
Excluded: bouillon from meat, fish, mushrooms, beans.

Meat. Different types of meat and poultry only of non-fat kind, boiled and baked, whole piece or chopped.
Excluded: fat kinds, duck, goose, liver, kidneys, sausages, smoked food, canned food.

Fish. Non-fat kinds, boiled, backed, whole piece or chopped. See food dishes (mussels, sea kale etc.).
Excluded: fat kinds, salted and smoked fish, canned fish and caviar.

Milk products. Milk and sour-milk drinks with low fattiness, cottage cheese with 9% fattiness and non-fat (also dishes from it), non-fat and slightly salted cheese, sour crиme – only to dishes.
Excluded: salty and fat cheese, fat sour crиme and creams.

Eggs. Protein omelets, soft-boiled eggs – no more than 3 eggs per week. Limited – yolks from eggs.
Cereals. Buckwheat, oatmeal, millet, peeled barley etc. – porridges and backed puddings. Limited – rice, semolina, macaroni dishes.

Vegetables. Different dishes from cabbage of all kinds, beet, carrot, marrow, pumpkin, egg-plants, potatoes, green peas. Fresh cucumber, tomatoes, salad. Greens – only to dishes.

Excluded: garden radish, sorrel, spinach, mushrooms.

Snacks. Vinaigrettes and salads with oil, including sea kale, salads with sea foods, boiled fish and meat, wetted herring, non-fat slightly salted cheese, dietary sausages, non-fat ham.
Excluded: fat, peppered and salted products, caviar, canned food.

Fruits, sweet dishes. Fresh fruits and berries, dried fruits, stewed fruits, jelly, mousse, sambucuses. Limited – grapes, raisins, sugar, honey (instead of sugar), jam.
Excluded: chocolate, cream products, ice cream.

Sauces and spices. Dressing made on vegetable broth, sour crиme, milk, tomatoes, fruits and berries. Vanillin, cinnamon, citric acid. Limited – mayonnaise, horse radish.
Excluded: sauces from mushrooms, fish, meat, pepper, mustard.

Drinks. Non-strong tea with lemon, milk; light natural coffee, coffee drinks; vegetable, fruit, berry juices. Dog-rose broth.
Excluded strong coffee and tea, cacao.

Fats. Butter and oil – to cooking, oil – for dish dressings. Dietary butter.
Excluded: meat and culinary oils.

Menu for lower cholesterol diet:

First Breakfast – pudding from non-fat cottage cheese, boiled buckwheat, a cup of tea

Second Breakfast – fresh apple

Dinner – pearl barely soup with vegetables and oil, meat balls (made on steam), stewed carrot, stewed fruits.

Lunch – dog-rose broth. Supper – vegetable salad with sea kale and oil, fish baked with milk sauce, boiled potato, tea.

Before going to bed – a glass of milk.
